Chicken Pesto Pasta

Time: 15 min prep + 10 min cook

Method

  1. Get pasta boiling.
  2. Dice chicken breast. Thinly slice zucchini. Cut up asparagus.
  3. Add asparagus and peas in the last few minutes of boiling the pasta.
  4. Drain pasta saving around 1/2 cup of liquid.
  5. Oil in non-stick pot on high for 3-4 min to brown up chicken.
  6. Add zucchini and garlic to pot. Cook for around 2 min till zucchini is tender/browned. Turn off heat.
  7. Stir in pasta mix, pesto, spinach and some of the reserved liquid, parmesan.
