Pavlova

Time: 15 min prep + 1.5 hr cook

Method

  1. Let eggs get to room temp, seperate egg whites.
  2. Preheat oven to 170 degrees.
  3. Beat egg whites till frothy and no more running whites visible.
  4. Slowly mix in sugar while beating.
  5. Add cornflour and vinegar. Beat till thickish and glossy. Rub with vingers to ensure no sugar grit.
  6. Pour into cake tin lined with baking paper.
  7. Bake for 1.5 hrs on 115 degrees. Then let cool.
  8. Whip up some cream, apply as topping with fruit.
