Popsicles, ice blocks, frozen yogurt
Amount for the white mould:
- 1/4 cup blueberries (or mixed blueberries)
- 1 tbs glucose syrup / honey
- 2 tbs maple syrup
- 1/8 tsp xanthan gum
- 1 1/4 cups full greek yogurt
- 100ml dolop cream (opt)

Method
- Microwave the glucose syrup ~ 20 sec till runny.
- Add everything excluding cream/yogurt to the blender, and blend keeping chunky.
- Stir the blended fruit mix into the yogurt.
- Refridgerate in moulds for a few hours till thickened.
- Freeze for min 3 hours.
Notes
Sugar & fat improve texture. Placing in the fridge to bring temp down slowly improves texture.
