Popsicles, ice blocks, frozen yogurt

Amount for the white mould:

  • 1/4 cup blueberries (or mixed blueberries)
  • 1 tbs glucose syrup / honey
  • 2 tbs maple syrup
  • 1/8 tsp xanthan gum
  • 1 1/4 cups full greek yogurt
  • 100ml dolop cream (opt)

Method

  1. Microwave the glucose syrup ~ 20 sec till runny.
  2. Add everything excluding cream/yogurt to the blender, and blend keeping chunky.
  3. Stir the blended fruit mix into the yogurt.
  4. Refridgerate in moulds for a few hours till thickened.
  5. Freeze for min 3 hours.

Notes

Sugar & fat improve texture. Placing in the fridge to bring temp down slowly improves texture.
